"Fancy" Camp Food #3!

Ya... so over in my bio I mention how I try to be healthy, thrifty, responsible, organic, etc...  And how I sometimes just want Oreo's?  Well this post falls into the second category.  If for no other reason than I just took the easy way out.  I wasn't going to let anything get in the way of having an awesome camping weekend.  Especially not guilt over eating badly.

(For more recipes and camp ideas, check out my earlier and more fancy camping food posts here and here.)

This was a bit of a last minute trip, which included leaving right after work on Friday (after having to stay and work late...sigh...) and getting all prep, laundry, groceries, and new shoe shopping squeezed into a couple hours Thursday night.  The shoes were not for me!  But instead for our dog, Hudson.  He needed hiking boots.  Bright red ones, to be fancy.

We planned to spend most of our time kayaking, hiking, and exploring.  Eating was just going to be a necessary "evil" invading our fun time.  So the plan was to make it as quick and effortless as possible.

Breakfast

I'm not going to lie... we had donuts and French Press coffee.  Shrug.  I will admit I was jealous of a nearby camper who was making what I imagined to be an awesome egg & veggie skillet based on the undeniable smell of grilled onions and peppers.  And as I sadly looked at my chocolate covered donut, I was only slightly sad for a moment.  The morning of Day two we made coffee again, but added a packet of hot chocolate.  Camping mocha!

Lunch

Josh's parents met us at the lake to go kayaking and have lunch.  We had all the "pick-nic" supplies.  Spread it all out on the table and just picked and snacked away!  This is the perfect way to eat lunch.  There really is NO prep.  I suppose it is an "adult-only" type of lunch.  Not because of any scandalous reason, other than dirty little kid hands.  So maybe they can point and you put their choices on a fun and colorful kid plate.  Or maybe if you actually have kids, you aren't freaked out by the germs as it is most likely part of a normal day.

  • Hummus
  • Cheese- sliced cheddar, & mozzarella string cheese
  • Crackers
  • Deli Turkey
  • Sliced Avocado
  • Grapes
  • Cherries
  • Sliced Apples
  • Edamame
  • Trail Mix
  • Beef Jerky
  • Almonds
  • Gummy Bears
  • Andes Mint Chocolate Cookies- so good!

Dinner

We went with classic BBQ.  Josh made a steak, and I had a veggie patty.  Guilty pleasure- Ranch Style Beans and an easy side salad with avocado and 3 beans made it a complete meal.

The only hiccup was the "3 bean" part of our salad.  I normally buy this in a jar with a marinated mix of kidney, garbanzo, and green beans.  And it's a great, easy way to add color and flavor to some greens with no additional dressing needed.  But neither of our two grocery stores had it late on Thursday night.  So I settled for a version that came in a can.  (Which I never do and shouldn't have panicked and compromised.) Sadly, it didn't even come close.  First it didn't have garbanzo beans but instead wax beans which honestly they lived up to their name 100%.  And second, the green beans actually made a rubbery, squeaky sound when you bit into them.  No thanks.  The only edible item in that can was the kidney beans.  So what I learned was, don't buy that again.  Ever.  I recommend you don't try it either.

It was still a great trip.  A quick weekend get away, time with family, kayaking, and exploring the beautiful scenery that is all around us.  Despite the food fail (I won't mention the stop at McD's on the way home...) the rest of the trip was a complete success.  And so it just goes to prove- It really doesn't have to be fancy!  It just needs to fit in your car.

Can you spot Hudson back there with all the gear?!?!?

"Fancy" Camp Food Day #1

Ok, so maybe it's only a step up from roasting a hot dog over a camp fire!  Calling this "fancy" would be more of a stretch than normal.  The point is, that if I can make this stuff while roughing it, then you can make it at home.  Easy as can be.

Last weekend we had an awesome camping trip with some great friends.  And we did rough it more than our typical camping excursions with our tent trailer.  This trip we were like real explorers.  Out in the middle of nowhere.  Nobody around for miles.  The views were spectacular.  I can't even describe just how perfect this trip was.  And we hauled everything, fancy food and all, inside an old military trailer with a roof top tent.  Poor Huddy was banished to the truck each night to sleep by himself.  (He probably had the coziest spot in all honesty...)

A gorgeous sunset welcomed us to camp on the first night.  What a great start to the trip!

But back to the food!  We had some of the typical camping staples- Popems (donut holes), string cheese, grapes, crackers, etc.  But there were no sad, dry sandwiches to be found, no hot dogs, no greasy chips, and no burnt marshmallows.  We had real food.  I made pizza one night.  Josh had a steak and salad.  We had personalized camping version rice bowls.  And our new friends made awesome peach cobbler for dessert.  We managed to eat tasty food with very little effort.

Night #1- Shalon

If this looks familiar it's because this is a slightly modified version of the Pita Pizza's I posted last week.

Ingredients

  • One whole wheat round pita bread
  • Pesto from a jar
  • String cheese
  • yellow & orange bell pepper slices
  • sliced olives
  • Baby Arugula and Spinach salad mix
  • Avocado
  • Grapes

Directions

  1. Toss the sliced bell peppers into the pan on your camp stove on medium heat to let them get warm, and slightly "charred."  (This is camping and it has to look authentic!)
  2. Spread pesto onto one side of your pita bread.
  3. Like a 6 year old, carefully pull stings from your piece of string cheese and place on top of the pesto.
  4. Open your can of olives, drain, and add to your pita pizza.
  5. Check your peppers, maybe flip them.  They probably aren't ready because steps 2-4 only took about 2 minutes.
  6. Slice some avocado for your salad.
  7. Remove a few grapes from the bunch.
  8. Arrange some arugula/spinach mix on your plate, add your avocado & grapes and dressing of your choice.  I used some of the pesto as my dressing.
  9. Check the peppers.  When ready, move them to the side of the pan, add your pita with it's pesto, cheese, and olives top side up!  Then toss HALF the peppers on top.  Reserve the other half for hubby.
  10. Heat until the cheese begins to melt- about 3 minutes.  (Your pita shouldn't burn but will crisp just slightly.)
  11. Remove from the pan, add to your plate and eat!

Night #1- Josh

Ingredients

  • Manly sized piece of steak from the butcher (He used a rib eye)
  • yellow & orange bell pepper slices
  • Baby Arugula and Spinach salad mix
  • Avocado
  • Grapes

Directions

  1. Start with "room temperature" steak.
  2. Add spices, marinade, etc to your steak.  Hubby bought a Korean marinated rib eye that morning.
  3. Preheat your grill on high
  4. Cook to desired.  Here is a handy calculator to tell you how long to grill your steak based on cut and how well you like it.
  5. Let it grill and flip only once half way through.  Resist the urge to "mess" with it.
  6. Remove from heat and let it sit for 5 minutes.
  7. Add some grilled peppers as a side, along with the salad.  Enjoy!

He didn't snap a picture of his steak, so here is his truck instead!  We used the tailgate as a prep station, and to do the dishes.
I'll post more from our trip and the fancy camp food we made in the next post!  (Camp Food Day #2 is posted here!)  I'll be honest and admit there will probably be more pictures of the fun and the scenery than the food.  I  wasn't in my "blogging" frame of mind while enjoying this awesome camping trip.  Missed most of the food picture opportunities. Shame on me!

Pack a Picnic!

It gets hot here in the summer.  Like days upon days in the high 90's or over 100.  Hubby is not a fan.  And we don't have a pool.  And nobody is excited to heat the house up by turning on the stove or the oven.  But we are lucky enough that a quick drive up Hwy 50 takes us into the beautiful Sierra's and many spots to escape the heat and enjoy the scenery.

In May, we celebrated Josh's birthday "month" every chance we had.  You only turn 40 once!  We took a week off of work to relax, explore, and just spend quality time as a family.  Mid week, we embarked on a day trip to one of our favorite spots, Hope Valley.  We've camped up here, had picnics, and explored nearby Blue Lake many times, sun & snow both.  Hudson loves to chase bugs in "our" meadow and to swim in the river.  It's peaceful and absolutely beautiful.  We were the only people there and had these gorgeous views all to ourselves.
It was a little cold & windy (and by little I mean freezing) in Mid May and I was glad I had an extra sweatshirt and blanket.  But it was still a great trip, a short drive, and a nice day with my boys.

Picnic Ingredients

  • For me-
    • Fresh Hummus with lime and cilantro from the Nugget deli
    • Roasted Garlic & Herb crackers that I had in my pantry
    • Sliced Mandarins (cause I don't eat them or their grody pulp, I just suck the juice!)
    • Baked Veggie Chips
    • Honest Tea
  • For him-
    • SABLT wrap from the Nugget (Salmon, avocado, bacon, lettuce, tomato)
    • Hawaiian chips left over from Mothers Day lunch
    • Sliced Mandarins (cause he puts up with my weirdness)
    • Mexican Coke in a bottle
  • For us Both-
    • bite sized Reese's & Kit Kats

Directions

  • Ummmm.. eat!
  • Enjoy the view

And this beautiful place is the reason we are able to tolerate it when the temps reach 107...  ugh...
